CBD Competitor Emerges in Trend Forecasts

Spoonshot, a food innovation intelligence platform, in partnership with food trends forecaster Elizabeth Moskow, has developed a list of food trend predictions for 2021 and beyond, reports Food Business News. Among the trends is copaiba, which is derived from the resin of the Copaifera tree and features an earthy, woodsy flavor. Because it is seen as a remedy for inflammation, chronic pain, and anxiety, Moskow says, “We think we’ll see copaiba as a competitor to CBD in food and beverage products.”

Other predictions include the return of carob as well as olive oil, embracing sweet and umami flavors, and chickpea flour. Full Story
