Sales of foie gras have increased since the New York City Council banned it, reports the New York Post. Sales of goose liver are up 20 percent and duck liver, 30 percent, according to farmers, distributors, and chefs.
Many consumers didn’t take well to the ban. “The day New Yorkers heard about the ban, every single table ordered foie gras. Even at the bar,” says Marco Moreira, the executive chef and owner of French restaurant Tocqueville near Union Square.
